Creating
fun times with the family can be tough when school starts - homework begins to
pile up and chores need to get squeezed in, let alone taking care of work
responsibilities, etc.!
Suddenly
you have a lot less time to spend together doing things you love to do. We have
a solution...Ya gotta eat, right?! So, take the time you would typically use to
make dinner and once or twice a week have the kids participate in making
breakfast, lunch or dinner for or with you! It's a great way to bond, have fun
and be creative together - and let's face it, this is a super delicious project
everybody loves in the end!
Peanut Butter and Jelly Tacos
Peanut butter (or any of your favorite nut butters)
Jam or jelly of your choice
Dried or fresh fruit
Graham cracker crumbs
Small whole wheat tortillas
Spread nut butter and jelly on the top of the pita
Top with fruit and graham cracker crumbs
Fold like a taco and ENJOY!
Perfect Pizza Bagel
Whole wheat bagel
Pizza sauce
Shredded mozzarella cheese
Toppings of your choice
Place both sides of bagel in toaster until lightly toasted, then
pop it onto a cookie sheet.
Cover with pizza sauce, cheese and toppings
Bake until the cheese is melted. Chow Down!
Cheesy Bowtie Pasta and Peas
Bowtie pasta
Green peas (frozen is fine)
1/4 cup butter
1 cup milk
1 1/2 cup Mozzarella cheese
1 1/2 cup Romano cheese
1/4 cup flour
Salt and pepper
Cook pasta, drain, then place in a baking dish
Cook peas with a little butter
In a pot, combine butter and flour with salt and pepper stirring
until smooth. Gradually add milk. Bring to a boil and cook for 2 minutes.
Remove from the heat.
Get baking dish with the cooked pasta and stir in cheeses and
peas.
Top with extra cheese.
Bake uncovered for about 30 minutes. It’ll be bubbly and delicious!
Rainbow Cheese and Fruit Skewers
Strawberries
Cheddar Cheese
Banana
Green Grapes
Blueberries
Blackberries
Wooden skewers
Honey or yogurt
Cut strawberries in half
Cut cheddar cheese into cubes
Slice bananas into thick slices
Keep grapes, blueberries and blackberries whole.
Slide everything on the skewer starting with the blackberries
and work your way up to the strawberries. You’ll have a beautiful rainbow of
healthy fruit and cheese. Dip into honey or yogurt for extra fun.
Vegetarian Taco Pizza
Whole wheat biscuit dough (store bought is fine)
Meat alternative crumbles
Packet of taco seasoning
Olives (sliced black or green or both!)
Yellow Onion
Shredded cheese
Tomato
Guacamole or avocado
Salsa

Green Onion
Spread biscuit dough out on cookie sheet or pizza cooking sheet
so that it covers it, pinching around the edges to create a pizza crust. Bake
in the oven until lightly brown.
Cook meat alternative, yellow onion, olives and taco seasoning
in a skillet.
Top cooked pizza dough with meat alternative mixture.
Top that with shredded cheese.
Place in the oven at 350 degrees for around 8 minutes or until
the cheese is melted.
Top with tomato and green onion.
Serve with salsa, sour cream and guac.
Strawberry Peach Milkshake
1/4 cup almond or coconut milk
2 Tbsp honey
2 cups strawberries
1 1/2 cups peeled and sliced peaches
2 cups vanilla coconut or almond milk ice cream or frozen yogurt
Place fruit, milk and honey in the blender and blend until
pureed.
Add the ice cream and blend.
